About 90% of tatami (okay, I just made that stat up, but it’s close) are produced from the igusa plant grown in Yatsushiro. The fragrance of fresh tatami is heavenly. Arenji has an article on how tatami are made and used. One thing I learned as a neophyte in Japan is to never clod on the 畳べり地 (tatamiherichi - the cloth edging bordering tatami) as it wears it down.
