Meandering the craggy frays of Kagoshima’s coast, I came across a small wooden building emitting smoke. Curious, I stopped to check it out. Turns out it was a salt producer. The woman running the facility told me that the high calcium content of the local sea resulted in very tasty salt. She gave me a bag, and on the spot, I became a salt connoisseur.

Japanese take salt pretty seriously, as you can see from the photo below. A shop exists on the road to Fujisaki Shrine, just across from the shoe shop, which specializes in salt. The owner is a nice gent who will let you sample various types to find one which suits your palate. - William
